La Ferme du Pasteur Au Fond Ça Souffle Blanc 2024

La Ferme du Pasteur is a young project (first vintage 2021) from Caroline Connolly, from Richmond, Virginia, and Rémy Kaneko, a former fresco restorer and co-owner of the Paris natural-wine bar Chambre Noire. They farm about two hectares in Saint-Maurice-sur-Eygues near Nyons in the southern Rhône, next to Rémy's family olive farm, with old vines on clay-limestone covered in large rounded stones. Natural ferments, gentle extraction, and no additives — sulfur included.

Au Fond Ça Souffle ("deep down, the wind blows") is their white. Fresh and lively, with juicy fruit, wildflowers and herbs and a slightly salty, mineral edge — bright on top, with quiet depth underneath.
