Anne-Marie Lavaysse founded Le Petit Domaine de Gimios in the 1990s on the high schist-and-limestone plateau above Saint-Jean-de-Minervois, about 320 m up. It's one of the Languedoc's natural-wine pioneers: roughly 5 hectares in sixteen small plots, some vines over a century old, farmed biodynamically as part of a full polyculture farm (cows, vegetable garden, fruit trees). Nothing is added in the cellar — not even sulfur. Her son Pierre now works alongside her.
Saint-Jean-de-Minervois is famous for sweet Muscat; this is the dry version, fermented fully dry. Floral and aromatic — rose and white flowers — with the freshness that altitude brings. A rare bottle from an estate that trained a generation of natural winemakers (including Julie Brosselin of Les Cigales).
